Why You Need A Silpat (Or Two)
Have you ever heard of a Silpat? No, that’s not a typo and I’m not speaking French. A Silpat is a silicone baking mat. They’re floppy, somewhat tacky feeling and outlined in a bright orange color, but somehow all of those magical properties combine to form a perfectly non-stick mat on which you can bake all sorts of things.
Not convinced yet? Maybe this will do the trick.
Here are your cookies baked with a Silpat on a jelly roll pan.
So round, so pretty, so perfect.
And here are your cookies baked with a parchment / wax paper (NOT recommended) covered jelly roll pan.
So, so unfortunate. All misshapen and flat.
To recap: round, pretty and perfect cookies – use a Silpat. It also comes in handy for other things, like making sticky candy, and never needs to be greased or oiled. I love my Silpat!
Mine has a black edge – we made a stromboli on it and you can see a perfect outline of where the stromboli had been sitting – did this happen to you? Any stains on your silpat?
