I guess we can say it’s been well established that I love chocolate. A full 50% of the posts I’ve made so far on this site have involved chocolate in some form. What can I say? It’s delicious.
However, it’s time to give my other favorite food a turn in the spotlight: CHEESE. I am no cheese expert, a cheesemonger if you will, but I know what I like. And what I like is pretty much everything. American, Swiss, French brie to stinky Gorgonzola, it is a rare cheese that I will not eat. If you forced me too, I suppose I would tell you that really sharp cheddar and Asiago cheeses are my favorite, but please don’t force me to choose! That’s just mean.
Every now and then I browse through the cheese case at my local grocery store and pick something new to try. My latest selection was a Champagne cheddar made by Yancey’s Fancy.
Cheddar can range from relatively smooth and creamy to very sharp and almost crumbly, depending on what kind you get. This Champagne cheddar definitely falls on the smooth and creamy side. It’s not sharp and doesn’t taste at all boozy. You’ll first taste a creamy white cheddar, followed by the sweet aftertaste of champagne. It’s unlike any other cheddar I’ve tasted, but it’s quite addictive!
Champagne cheddar tastes great alone on whole wheat crackers, but I bet it would also be fantastic in a turkey sandwich. Wegman’s has a Cajun Turkey & Champagne Cheddar recipe on their website that sounds like it would be a great place to start. Whatever you do with it, it will be hard to disappoint. I served up a wedge as part of an appetizer tray before Thanksgiving dinner and my guests polished off every last crumb!
I’ve found Yancey’s Fancy Champagne cheddar at my local grocery stores and at Costco. Chances are that a store near you carries it too. What are you waiting for?
