Flourless Peanut Butter Chocolate Chip Cookies

Earlier this week, the seriously charming Pioneer Woman declared this week Cookie Week. My life motto is, “Live every week like it’s Cookie Week” (or is it “Live every week like it’s Chocolate Week”?), so obviously I was game.

I didn’t hear about Cookie Week until the work week had already started, so I needed something that would both satisfy my cookie craving and be quick and easy to bake up after work. You might remember the super-easy Peanut Butter Cookies, Three Ways I bake up last June. Well, this recipe is a slight variation of that same recipe, which is to say it’s flourless, uses only 7 ingredients that you’re practically guaranteed to have in your kitchen right now, and is so fast and easy it’s almost ridiculous. This variation adds chocolate chips and uses slightly less sugar. The result is peanut butter chocolate heaven. I can’t stop eating them! This recipe will be my new go-to recipe for when I must. have. cookies. NOW.

Flourless Peanut Butter Chocolate Chip Cookies

Flourless Peanut Butter Chocolate Chip Cookies

Adapted from Southern Living
Makes roughly 16 large cookies

Resist the urge to take these cookies off the pan right away. They’re very soft when the first come out of the oven and will fall apart. Let them cool on the cookie sheet until they are firm enough to move.

Ingredients

1 cup creamy peanut butter
1/4 cup brown sugar (light or dark)
1/2 cup granulated sugar
1 large egg
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips

Directions

Preheat oven to 350°F. Line two baking sheets with parchment paper or Silpats.

In a medium bowl, combine peanut butter, sugars, egg, baking soda and salt and stir with a spatula until blended. Fold in chocolate chips.

Using a 2-tablespoon scoop, measure out 8 cookies to a baking sheet (2 rows of 3 cookies, plus 2 in the middle). Bake one sheet at a time at 350°F for 10-12 minutes, or until puffed and edges are just starting to brown. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool until firm.

    There are so many chocolate chips on that cookie’s tiny surface area–which is absolutely wonderful.

    I’m with you on the life motto. Add ice cream to that and it basically describes my way of being. And anyone who does anything else is just depriving themselves. I’m sure of it.

    These sound delicious! Peanut butter and chocolate are matches made in heaven!

    These look great, I LOVE peanut butter cookies. Is there a big difference in taste or texture between a normal cookie and flourless cookie? Are they more chewy? I’ve never made a flourless cookie before, but these look like a good place to start. Too bad I’m almost out of peanut butter!

      It’s been a few years since I had PB cookies with flour, but if I remember right these are less crisp than the flour version. They’re not exactly chewy, more like soft and a little crumbly.

    I had these cookies for the first time a couple of years ago and FELL IN LOVE!!!!! I put them in the freezer in hopes of making them last longer…nope…the frozen cookie was still SO good! So I ate them for breakfast lunch and dinner.

    It always amazes me that cookies can be made and be delicious without any flour. These look delish :)
